Ramen Ichinen is a cozy corner of northeast Calgary where every bowl is built from scratch — real broth, fresh noodles, and toppings layered with care.
The broth
Everything starts with the tonkotsu — simmered low and slow until it turns silky, rich, and full of depth. There's no shortcut to that kind of flavour, and we wouldn't want one.
Your bowl, your way
Choose fatty chashu belly or lean, thin noodles or thick, mixed greens, oil amount, and spice anywhere from one to ten. Your guide at the table isn't a formality — it's the whole idea.
